Ingredients:
  • 8 ounces of bihon (thin rice noodles)
  • 2 tablespoons vegetable oil
  • 2 cloves of garlic, minced
  • 1 small onion, thinly sliced
  • 1 boneless chicken breast, sliced into thin strips
  • 1/2 cup of pork belly or pork loin, thinly sliced
  • 1 cup cabbage, shredded
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1/2 cup green beans, sliced into 2-inch pieces
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1/2 teaspoon black pepper
  • 4 cups chicken broth
  • Calamansi or lime wedges, for serving
  • Fresh cilantro or green onions, for garnish

Instructions:
  1. Place the bihon noodles in a bowl of warm water and let them soak for about 10 minutes until they become soft, then drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium heat. Add the garlic and onion, and sauté until they become fragrant.
  3. Add the chicken and pork to the pan, stirring occasionally until they are lightly browned and cooked through.
  4. Add the vegetables to the pan, including cabbage, carrot, red bell pepper, and green beans. Stir-fry for a few minutes until the vegetables are slightly tender.
  5. Push the ingredients to one side of the pan and add the drained bihon noodles to the other side. Pour in the soy sauce, fish sauce, and sprinkle black pepper over the noodles. Gently toss the noodles with the sauce and ingredients, ensuring they are well-coated.
  6. Pour the chicken broth into the pan and bring to a simmer. Allow the noodles to cook in the broth for about 5-7 minutes until they absorb the liquid and become tender.
  7. Adjust the seasoning to your taste, adding more soy sauce or fish sauce if desired.
  8. Remove from heat and transfer the Pancit Bihon to a serving dish. Garnish with fresh cilantro or green onions.
  9. Serve hot with calamansi or lime wedges on the side for squeezing over the noodles.
