Ingredients:

• 4 lamb shanks
• 2 tablespoons olive oil
• 1 large onion, finely chopped
• 4 garlic cloves, minced
• 2 carrots, peeled and diced
• 2 celery stalks, diced
• 1 cup red wine (such as Merlot or Cabernet Sauvignon)
• 2 cups beef or vegetable broth
• 2 sprigs of rosemary
• 2 sprigs of thyme
• Salt and pepper, to taste

Instructions:

1. Preheat your oven to 325°F (160°C).
2. Season the lamb shanks generously with salt and pepper.
3. Heat the olive oil in a large, oven-safe pot or Dutch oven over medium heat. Brown the lamb shanks on all sides until nicely caramelized. This will give them a flavorful crust. Remove the shanks from the pot and set them aside.
4. In the same pot, add the chopped onion, minced garlic, diced carrots, and celery. Sauté until the vegetables are softened and lightly golden, about 5 minutes.
5. Pour in the red wine and deglaze the pot, scraping the bottom to release any flavorful bits.
6. Return the lamb shanks to the pot and pour in the broth until the shanks are almost fully submerged. Add the rosemary and thyme sprigs.
7. Cover the pot with a lid and transfer it to the preheated oven. Allow the lamb shanks to simmer gently for about 2 to 2.5 hours, or until the meat is fall-off-the-bone tender.
8. Once the lamb shanks are tender, remove them from the pot and keep them warm.
9. To make a luscious gravy, strain the liquid from the pot, discarding the cooked vegetables and herbs. Skim off any excess fat from the surface.
10. Place the strained liquid back into the pot and simmer over medium heat until it reduces and thickens into a flavorful gravy consistency.
11. Serve the lamb shanks on a platter, drizzle them with the aromatic gravy, and garnish with fresh herbs if desired.
