Ingredients:
  • For the dough:
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup water
  • For the filling:
  • 400 grams minced chicken
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 green chilies, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon oil
  • Salt and pepper to taste
  • For the dipping sauce:
  • 1/2 cup tomato ketchup
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 teaspoon chili flakes

Instructions:
  1. In a large bowl, mix the all-purpose flour and salt for the dough. Gradually add water and knead until you have a smooth and elastic dough. Cover the dough and let it rest for 15-20 minutes.
  2. In the meantime, prepare the filling. Heat oil in a pan over medium heat. Add minced chicken and sauté until cooked through and no longer pink.
  3. Add onion, garlic, ginger, green chilies, and cilantro to the cooked chicken. Stir-fry for 2-3 minutes until the onions are translucent.
  4. Season with soy sauce, salt, and pepper. Mix well and cook for another minute. Remove from heat and let the filling cool slightly.
  5. Divide the rested dough into small golf ball-sized portions. Take one portion, flatten it on your palm, and roll it into a small circular disc.
  6. Place a spoonful of the chicken filling in the center of the disc. Gather the edges of the disc and pleat to enclose the filling. Pinch and twist the pleats together to seal the momo. Repeat with the remaining dough and filling.
  7. Bring water to boil in a steamer. Lightly grease the steamer tray to prevent the momos from sticking. Place the momos on the steamer tray, leaving a small gap between each momo.
  8. Steam the momos for about 10-12 minutes or until they turn translucent and the dough is cooked through.
  9. While the momos are steaming, prepare the dipping sauce. In a small bowl, mix tomato ketchup, soy sauce, vinegar, and chili flakes. Adjust the seasonings according to your taste.
