  • 2 cups (400 grams) of long-grain rice
  • 4 cups (960 ml) of chicken broth
  • 1/2 teaspoon of saffron threads
  • 1 teaspoon of paprika
  • Salt and pepper, to taste
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions:
  1. Season the chicken pieces with salt and pepper. In a large Dutch oven or deep skillet, heat the olive oil over medium heat. Brown the chicken on all sides until golden. Remove the chicken and set it aside.
  2. In the same pot, add the chopped onion and sauté until translucent. Stir in the minced garlic and cook for another minute until fragrant. Add the sliced bell peppers and diced tomato. Cook until the vegetables start to soften.
  3. Return the chicken back to the pot and pour in the rice. Stir well to coat the rice with the flavorful mixture. Toast the rice for a couple of minutes until it absorbs some of the flavors.
