Ingredients:
  • 2 pounds beef chuck, cut into bite-sized cubes
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons sweet paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon caraway seeds
  • 2 bell peppers, diced
  • 2 tomatoes, diced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Sour cream (for serving)

Instructions:
  1. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the chopped onions and garlic. Sauté until they become soft and translucent.
  3. Stir in the sweet paprika, smoked paprika, and caraway seeds, and cook for another minute to release their flavors.
  4. Add the diced bell peppers and tomatoes to the pot. Cook for a few minutes until they start to soften.
  5. Return the browned beef to the pot and pour in the beef broth and red wine (if using). Season with salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.
  7. Once the goulash is ready, taste and adjust the seasoning if needed.
  8. Serve the goulash hot, garnished with freshly chopped parsley and a dollop of sour cream. It pairs wonderfully with crusty bread or buttered noodles.
