Ingredients:
  • 500g bitter leaves (substitute with spinach or collard greens if bitter leaves are unavailable)
  • 500g beef, cubed
  • 500g boiled peeled prawns
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of ground peanuts or peanut butter
  • 2 tomatoes, chopped
  • 2 teaspoons of ginger, grated
  • 2 teaspoons of hot pepper, chopped (adjust to your taste)
  • Salt and pepper to taste

Instructions:
  1. Begin by boiling the bitter leaves in a pot of water for about 15 minutes to reduce their bitterness. Drain and set aside.
  2. In a large pot, heat the vegetable oil and sauté the onions and garlic until golden brown.
  3. Add the beef cubes and cook until browned on all sides.
  4. Stir in the tomatoes, ginger, hot pepper, and season with salt and pepper. Cook for a few minutes until the tomatoes soften.
  5. Add the boiled peeled prawns to the pot and mix well.
  6. Dissolve the ground peanuts or peanut butter in a little water to create a paste. Add it to the pot and stir until well combined.
  7. Finally, add the boiled bitter leaves to the pot and mix everything together. Simmer the Ndolé for about 45 minutes to allow the flavors to meld together.
  8. To serve:
  9. Ladle a generous portion of Ndolé into individual bowls or plates.
  10. Garnish with some fresh chopped parsley or cilantro, if desired.
  11. Serve hot and savor the delightful combination of flavors and textures.
