Moroccan Chicken Tagine

The Moroccan Chicken Tagine begins with succulent pieces of chicken, usually thighs or drumsticks, marinated in a harmonious blend of spices. Fragrant spices like cumin, turmeric, ginger, cinnamon, and paprika infuse the chicken, creating a symphony of aromas that will awaken your senses.

The dish is then slow-cooked in the tagine, a unique conical-shaped cooking vessel, which allows the flavors to meld together beautifully. As the chicken simmers, it absorbs the rich spices and becomes tender, creating a melt-in-your-mouth experience.

To enhance the dish further, an array of vegetables such as onions, tomatoes, carrots, and olives are added, adding depth and texture. The vegetables complement the aromatic spices, creating a harmonious balance of flavors. Some variations even include preserved lemons or dried fruits like apricots or raisins for a delightful hint of sweetness.

Ingredients:
  • 1.5 kg chicken pieces (thighs or drumsticks)
  • 2 onions, finely chopped
  • 4 cloves of garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 1 preserved lemon, pulp removed and rind chopped (optional)
  • 1/2 cup pitted green olives
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions:
  1. In a large bowl, combine the minced garlic, cumin, turmeric, ginger, cinnamon, paprika, salt, black pepper, and olive oil to make a marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Allow the chicken to marinate for at least 30 minutes, or ideally, overnight in the refrigerator for more intense flavors.
  3. Heat a tagine or a large, heavy-bottomed pot over medium heat. Add the marinated chicken pieces, reserving any leftover marinade.
  4. Brown the chicken pieces on all sides, then remove them from the pot and set them aside.
  5. In the same pot, add the chopped onions and sauté until they turn golden brown.
  6. Return the chicken pieces to the pot, along with any leftover marinade. Add the diced tomatoes, sliced carrots, preserved lemon rind (if using), and olives. Stir everything together gently.
  7. Reduce the heat to low, cover the pot with a lid, and let the tagine simmer for about 1 hour or until the chicken is cooked through and tender, and the flavors have melded together.
  8. Check the seasoning and adjust with salt and pepper if needed.
  9. Just before serving, garnish with freshly chopped cilantro or parsley.
  10. The Moroccan Chicken Tagine is traditionally served with couscous or crusty bread to soak up the delicious sauce. Enjoy this aromatic masterpiece with your loved ones, savoring every flavorful morsel.

The magic of the Moroccan Chicken Tagine lies not only in the flavors but also in the communal nature of sharing the dish. It is traditionally served at the center of the table, encouraging friends and family to gather, savor, and enjoy each mouthful together. Let the fragrant spices and tender chicken transport you to the bustling souks and vibrant landscapes of this enchanting country.
