What sets this rendang apart is the slow cooking process, which takes several hours to achieve its desired texture and intensity. The resulting dish boasts a deep, rich brown color and a melt-in-your-mouth consistency that is truly unforgettable. 

Ingredients:
  • 1 kg beef (preferably beef chuck), cut into bite-sized pieces
  • 4 shallots, finely chopped
  • 4 cloves of garlic, minced
  • 2 stalks of lemongrass, bruised
  • 2-inch piece of galangal, sliced
  • 4 keffir lime leaves
  • 1 cinnamon stick
  • 3 cardamom pods
  • 3 cloves
  • 2 turmeric leaves (optional, but adds a lovely aroma)
  • 400 ml coconut milk
  • 200 ml water
  • 3 tablespoons oil
  • Salt, to taste
  • Spice paste:
  • 5 red chillies, deseeded
  • 8 dried red chillies, deseeded and soaked in hot water until softened
  • 3 shallots
  • 3 cloves of garlic
  • 2-inch piece of ginger
  • 2-inch piece of galangal
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon turmeric powder

Instructions:
  1. In a blender or food processor, blend all the spice paste ingredients until smooth. Set aside.
  2. Heat oil in a large pot or wok over medium heat. Add the shallots, garlic, lemongrass, galangal, kaffir lime leaves, cinnamon stick, cardamom pods, and cloves. Sauté until fragrant.
  3. Add the spice paste to the pot and cook for about 5 minutes, stirring continuously.
  4. Add the beef to the pot and stir well to coat it with the spice mixture.
  5. Pour in the coconut milk and water. Bring to a boil, then reduce the heat to low and let it simmer uncovered for 3-4 hours, stirring occasionally. The beef should become tender and the sauce should thicken.
  6. Add salt to taste and continue simmering for another 30 minutes to develop the flavors.
  7. If using turmeric leaves, tie them into a knot and add them to the pot during the last 30 minutes of cooking.
  8. Once the beef is fork-tender and the sauce has thickened to your liking, remove from heat.
  9. Serve the Authentic Minang Beef Rendang hot with steamed rice or coconut rice. Enjoy the explosion of flavors!

Note: Traditional Minangkabau rendang is often cooked until the sauce is almost dry and the beef is caramelized. However, you can adjust the cooking time and sauce consistency according to your preference.
