But here's the twist that sets it apart: after removing from heat, the raw egg yolks are delicately incorporated, resulting in a velvety creaminess that effortlessly blends with the other ingredients. No additional cooking required!

Ingredients:
  • 500g fresh tuna, cubed
  • 1 cup breadcrumbs
  • 2 tablespoons cooking oil
  • 1 onion, finely chopped
  • 4 cloves of garlic, minced
  • 2 red chilies, finely chopped (adjust according to your spice preference)
  • 2 tablespoons soy sauce
  • 2 tablespoons calamansi or lemon juice
  • 2 egg yolks (raw)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Calamansi or lemon wedges (for serving)

Instructions:
  1. Heat the cooking oil in a large frying pan over medium heat.
  2. Dip each tuna cube into the beaten egg yolks and then coat with breadcrumbs.
  3. Fry the breaded tuna cubes until they turn golden brown and crispy. Set aside.
  4. In the same pan, sauté the chopped onion, minced garlic, and red chilies until fragrant and the onions become translucent.
  5. Add the fried tuna cubes to the pan and stir to combine.
  6. Pour in the soy sauce and calamansi or lemon juice. Season with salt and pepper according to your taste.
  7. Remove the pan from heat.
  8. Break the raw egg yolks into the mixture and gently mix until the yolks are well incorporated with the other ingredients.
  9. Allow the residual heat from the pan and the warm ingredients to lightly cook the egg yolks as you mix. The yolks will blend with the other ingredients, creating a creamy consistency without applying additional heat.
  10. Transfer the Tuna Sisig to a serving dish.
  11. Garnish with chopped green onions for added freshness and visual appeal.
  12. Serve the Tuna Sisig hot with calamansi or lemon wedges on the side for that extra zing of citrusy goodness.

Every mouthwatering bite unveils a harmonious blend of flavors, with the tender tuna playing harmoniously with the zesty calamansi, umami-rich soy sauce, and the delightful creaminess of the mayo. This delightful fusion of textures, both crispy and tender, will leave you craving for more.
