Tex-Mex Fajitas are a versatile and customizable dish, allowing you to mix and match different meats, vegetables, and toppings according to your preferences. It's a true celebration of bold flavors, vibrant colors, and the rich culinary heritage of both Texas and Mexico.

Ingredients:
  • 500 grams beef or chicken, sliced into thin strips
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 bell peppers (any color), sliced
  • 1 large onion, sliced
  • 8 flour tortillas
  • Optional toppings: guacamole, sour cream, shredded cheese, salsa, fresh cilantro

Instructions:
  1. In a bowl, combine the olive oil, lime juice, minced garlic, ground cumin, chili powder, paprika, salt, and pepper. Add the sliced beef or chicken and toss to coat. Allow the meat to marinate in the refrigerator for 1-2 hours if time permits, to enhance the flavors.
  2. Heat a large skillet or grill pan over medium-high heat. Add the marinated meat and cook for about 5-7 minutes, or until cooked through and nicely browned. Remove the meat from the skillet and set aside.
  3. In the same skillet, add a little more oil if needed, and sauté the sliced bell peppers and onions until they are tender-crisp and slightly charred, about 5 minutes.
  4. Warm the flour tortillas in a separate dry skillet or wrap them in foil and heat in a preheated oven for a few minutes.
  5. To serve, place a portion of the cooked meat on a warm tortilla and top with sautéed peppers and onions. Add your desired toppings, such as guacamole, sour cream, shredded cheese, salsa, and fresh cilantro.
  6. Fold the tortilla over the filling, tuck in the sides, and enjoy!

Tex-Mex Fajitas are a delightful and customizable dish that is perfect for gatherings or a flavorful weeknight meal. The combination of tender meat, colorful vegetables, and a variety of toppings creates a taste sensation that will transport you to the heart of Tex-Mex cuisine.
