  • 2 tablespoons grated galangal
  • 1 tablespoon tamarind juice (from soaked tamarind pulp)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 cup thick coconut milk
  • Salt to taste
  • Banana leaves, cut into 8-inch squares (for wrapping)
  • Toothpicks or bamboo skewers (for securing the wraps)

Instructions:
  1. In a food processor, blend the fish fillets until they become a smooth paste.
