Sambal Goreng Jawa is traditionally served with steamed rice, creating a harmonious balance between the fiery sambal and the mellow rice. The combination of textures and flavors in this dish is truly a treat for the senses. 

Ingredients:
  • 1 cup tempeh, cubed
  • 1 cup tofu, cubed
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 2 red chili peppers, sliced
  • 2 green chili peppers, sliced
  • 1 cup cabbage, shredded
  • 1 carrot, julienned
  • 1 cup long beans, cut into 2-inch pieces
  • 1 tablespoon tamarind paste
  • 1 tablespoon shrimp paste
  • 1 teaspoon brown sugar
  • Salt to taste

Instructions:
  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the minced garlic and sliced shallots to the pan. Sauté until fragrant and golden brown.
  3. Add the tempeh and tofu cubes to the pan. Stir-fry for about 5-7 minutes until they turn golden and crispy.
  4. In a small bowl, mix the tamarind paste with a little water to create a tamarind juice.
  5. Push the tempeh and tofu to one side of the pan and add the sliced chili peppers to the other side. Sauté the chili peppers for a couple of minutes until they become slightly softened.
  6. Add the shredded cabbage, julienned carrot, and long beans to the pan. Stir-fry for about 3-4 minutes until the vegetables are cooked but still retain some crunch.
  7. In a separate small bowl, combine the shrimp paste with a little water to create a paste.
  8. Add the tamarind juice, shrimp paste paste, brown sugar, and salt to the pan. Mix well with the vegetables and let it simmer for a few minutes until the flavors meld together.
  9. Taste and adjust the seasonings according to your preference. You can add more tamarind juice for tanginess or more chili peppers for extra heat.
  10. Remove from heat and serve the Sambal Goreng Jawa hot with steamed rice.
