  • 1 teaspoon chili flakes (adjust according to your spice preference)
  • 2 cups water
  • Salt, to taste
  • Lime wedges, for serving
  • Steamed rice, for serving

Instructions:
  1. Heat some oil in a large pot over medium heat. Add the shallots, garlic, and ginger. Sauté until fragrant and golden brown.
  2. Add the lemongrass, ground coriander, turmeric powder, and chili flakes. Stir well to combine and cook for about 2 minutes.
  3. Place the chicken pieces into the pot and cook until they turn slightly brown.
  4. Pour in the tamarind water, soy sauce, and palm sugar. Stir well to coat the chicken evenly.
  5. Add 2 cups of water, cover the pot, and let it simmer for about 30-40 minutes until the chicken is tender and the flavors have melded together. Stir occasionally and add more water if needed.
  6. Taste and adjust the seasoning with salt according to your preference.
  7. Once the chicken is cooked, remove the lemongrass stalks.
  8. Serve the Ayam Sioh hot with steamed rice and lime wedges on the side.
