Ingredients:
  • 10-15 red chili peppers
  • 4 shallots
  • 3 cloves of garlic
  • 1 tablespoon hard terasi (shrimp paste), burnt
  • 1 tablespoon vegetable oil
  • 1 tablespoon lime juice
  • Salt to taste

Instructions:
  1. Begin by burning the hard terasi. Heat a dry pan over medium-high heat and place the hard terasi in the pan. Toast it, flipping occasionally, until it becomes fragrant and slightly charred. Remove from heat and let it cool. Once cool, grind the burnt terasi into a fine powder using a mortar and pestle or a spice grinder.
  2. Slice the chili peppers, shallots, and garlic into smaller pieces for easier blending.
  3. Heat the vegetable oil in a pan over medium heat. Add the sliced chili peppers, shallots, and garlic. Sauté them until they become fragrant and slightly softened, about 3-4 minutes.
  4. Transfer the sautéed ingredients to a mortar and pestle or a food processor. Add the burnt terasi powder, lime juice, and a pinch of salt. Grind or blend everything together until it forms a coarse paste. You can adjust the consistency by adding a little water if desired.
  5. Taste the Sambal Terasi and adjust the salt and lime juice to your preference. Remember, Sambal Terasi should have a balance of heat, saltiness, and tanginess.
  6. Transfer the Sambal Terasi to a clean, airtight jar or container.

Note: Sambal Terasi can be stored in the refrigerator for up to a week. The flavors will develop and intensify over time.
