Ingredients:
  • 10-15 green chili peppers (such as serrano or Thai chili), stems removed
  • 4 shallots, roughly chopped
  • 3 cloves of garlic
  • 2 ripe tomatoes, roughly chopped
  • 2 tablespoons vegetable oil
  • 1 tablespoon lime juice, freshly squeezed
  • 1 teaspoon sugar
  • 1/2 teaspoon salt, or to taste
  • 2 tablespoons fresh basil leaves, chopped
  • 2 tablespoons fresh cilantro leaves, chopped
  • 2 kaffir lime leaves, thinly sliced (optional)
  • 1 stalk lemongrass, white part only, thinly sliced (optional)

Instructions:
  1. Start by preparing the green chili peppers, shallots, garlic, and tomatoes. Slice them into smaller pieces for easier blending.
  2. Heat the vegetable oil in a pan over medium heat. Add the sliced green chili peppers, shallots, and garlic. Sauté until they become fragrant and slightly softened, about 3-4 minutes.
  3. Add the chopped tomatoes to the pan and continue to sauté for another 3-4 minutes until they release their juices and soften.
  4. Remove the pan from heat and let the mixture cool for a few minutes. Transfer it to a mortar and pestle or a food processor. Add the lime juice, sugar, and salt. Grind or blend everything together until it forms a smooth yet slightly textured paste.
  5. Transfer the Sambal Ijo to a bowl and stir in the chopped basil, cilantro, kaffir lime leaves, and lemongrass (if using). Mix well to incorporate the herbs.
  6. Adjust the salt, sugar, and lime juice according to your taste preference.
