Ingredients:
  • 5 shallots, peeled and roughly chopped
  • 4 cloves of garlic, peeled
  • 10 red chili peppers, deseeded and roughly chopped (adjust quantity based on desired spice level)
  • 2 teaspoons of ground turmeric
  • 1 teaspoon of shrimp paste (belacan), roasted
  • Juice of 1 lime
  • 1 teaspoon of sugar
  • Salt to taste
  • 2 tablespoons of vegetable oil

Instructions:
  1. Heat a small dry skillet over medium heat. Add the shrimp paste (belacan) and roast it for a few minutes until fragrant. Remove from heat and set aside.
  2. In a blender or food processor, combine shallots, garlic, red chili peppers, roasted shrimp paste, ground turmeric, lime juice, sugar, and a pinch of salt. Blend until you achieve a smooth paste-like consistency.
  3. Heat the vegetable oil in a pan over medium heat. Add the sambal paste and stir-fry for about 5-7 minutes until the flavors meld together and the oil starts to separate from the mixture.
  4. Taste and adjust the seasoning with salt if needed. Add a little more sugar or lime juice for balance if desired.
  5. Remove from heat and let it cool. Transfer to a jar or airtight container and store in the refrigerator for up to a week.

Note: Sambal Kuning is traditionally spicy, but you can adjust the amount of chili peppers according to your preference.
