  • 2 1/4 cups water

  • 1 teaspoon salt

  • 2 tablespoons vegetable oil
  • For the filling:
  • 1 lb pork belly, cut into small pieces
  • 1/2 lb dried shiitake mushrooms, soaked in warm water until softened, and finely chopped
  • 1/2 cup dried shrimp, soaked in warm water until softened, and finely chopped
  • 1/2 cup shallots, finely chopped
  • 1/4 cup garlic, finely chopped
  • 1/4 cup scallions, finely chopped
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons kecap manis (sweet soy sauce)
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar/MSG
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon five-spice powder

Instructions:
  1. In a large bowl, mix together the pork belly, shiitake mushrooms, dried shrimp, shallots, garlic, scallions, soy sauce, oyster sauce, kecap manis, sesame oil, sugar, white pepper, and five-spice powder. Stir well to combine. Cover the bowl and marinate the mixture in the refrigerator for at least 2 hours, or overnight.
  2. Rinse the glutinous rice several times until the water runs clear. Soak the rice in water for at least 2 hours.
  3. Drain the rice and place it in a pot with 2 1/4 cups of water, 1 cup of coconut milk, 1 teaspoon of salt, 1/2 teaspoon of ground white pepper, and the pandan leaves. Stir well.
  4. Cover the pot and bring the mixture to a boil over high heat. Reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally, until the rice is cooked and the liquid has been absorbed.
  5. Remove the pandan leaves and let the rice cool for a few minutes.
  6. In a small bowl, mix 2 tablespoons of vegetable oil with a little bit of water.
  7. Wet your hands with the oil mixture and take a handful of the cooked rice. Flatten it into a rectangular shape and put a tablespoon of the Bakcang filling in the center.
  8. Roll the rice around the filling to form a cylinder. Press the ends to seal.
  9. Repeat with the remaining rice and filling.
  10. Wrap each Lemper in banana leaves or plastic wrap.
  11. Steam the Lemper for 10-15 minutes until heated through.
  12. Let cool slightly before serving.
