Ingredients:
  • 1 kg of mud crab or mangrove crab
  • 6-8 whole green chilies
  • 5-10 bird's eye chilies, chopped
  • 3-5 ghost peppers, chopped
  • 3 sour starfruit, sliced
  • 1 red onion, sliced
  • 5 cloves of garlic, minced
  • 1 thumb-sized ginger, minced
  • 2 tablespoons of tomato paste
  • 2 tablespoons of sweet soy sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of cornstarch
  • 2 cups of water
  • 3 tablespoons of vegetable oil
  • Salt and sugar to taste
  • 3 duck egg yolks, crushed

Instructions:
  1. Clean the crabs and cut them into pieces. Crack the claws slightly with a mallet or the back of a knife.
  2. Heat the vegetable oil in a wok or large pan over medium heat. Add the red onion, garlic, and ginger and stir-fry until fragrant.
  3. Add the whole green chilies, chopped bird's eye chilies, and chopped ghost peppers to the pan and stir-fry for another minute.
  4. Add the tomato paste, sweet soy sauce, and oyster sauce to the pan and stir to combine.
  5. Add the sliced sour starfruit and the crabs to the pan and stir-fry for 2-3 minutes.
  6. Dissolve the cornstarch in 2 cups of water and add it to the pan, stirring constantly.
  7. Bring the mixture to a boil and let it simmer until the sauce thickens.
  8. Add salt and sugar to taste.
  9. Turn off the heat and add the crushed duck egg yolks to the pan, stirring gently to combine.
  10. Serve the Crab Chilli Ala Sundaland hot with steamed rice.
