Ingredients:
  • 1 whole pork leg or knuckle
  • 1 tbsp salt
  • 1 tbsp peppercorns
  • 6 cloves garlic, crushed
  • Enough water for boiling
  • Oil for deep frying
  • For the Fuyunghai Sauce:
  • 2 cups chicken broth
  • 2 tbsp cornstarch
  • 2 egg yolks
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1/2 cup green peas
  • 1/2 cup corn kernels
  • 1/2 cup sliced carrots

Instructions:
  1. Clean the pork leg or knuckle thoroughly and remove any hair or debris.
  2. Rub the pork with salt, peppercorns, and crushed garlic. Let it marinate for at least 30 minutes.
  3. In a large pot, bring enough water to a boil to fully submerge the pork leg or knuckle. Add the marinated pork to the pot and boil for 1-2 hours until the meat is tender.
  4. Remove the pork from the pot and let it cool completely.
  5. Once the pork has cooled, deep fry it in hot oil until it is crispy and golden brown.
  6. In a saucepan, whisk together the chicken broth and cornstarch until the cornstarch is dissolved.
  7. Add the egg yolks, soy sauce, and oyster sauce to the saucepan and whisk until well combined.
  8. Place the saucepan over low heat and stir constantly until the sauce has thickened and reached the desired consistency.
  9. Add the green peas, corn kernels, and sliced carrots to the saucepan and stir until the vegetables are coated with the sauce.
  10. Place the Crispy Pata on a serving platter and pour the Fuyunghai sauce with vegetables over it.
  11. Serve hot with rice.
